18/09/2026 | Pop-up Food - Feast Coal-fired BBQ | Whether it’s a traditional sausage or a whole butterflied leg of lamb, Feast season the meat with their own blend of natural salts and spices before placing it over a bed of searing charcoal.
Now the fun starts, using the heat they build a bark or crust, nurturing the meat, basting and seasoning to achieve the Maillard reaction, a process that put simply produces thousands of flavour compounds giving the meat a very distinct and unique taste that cannot be achieved by other cooking methods.
